Harrison Competes In Annual State Heritage Cooking Contest
Ann Harrison of Clarke County entered her recipe for Bacon Tomato Cups in the 2018 Heritage Cooking Contest. The annual contest is sponsored by the Alabama Farmers Federation Women's Leadership Division and highlights a specific commodity. For 2018, pork was the highlighted commodity.
Bacon Tomato Cups
1 (10 oz.) can Hungry Jack flaky biscuits
1 tomato, chopped
½-1 bunch green onions, chopped
6-7 slices bacon, cooked and crumbled
½ cup mozzarella cheese
½ cup mayonnaise
Salt and pepper to taste
Directions: Preheat oven to 375 degrees. Spray mini muffin pans with pam. Divide biscuits into 3 equal parts. Press dough into muffin tins. Mix all other ingredients together and season to taste. Spoon cups 2/3 full. Bake at 375 for 8-10 minutes or until golden brown.
Clarke County Student Studying Agriculture Earns College Scholarship
Auburn University student Katherine Dixon of Clarke County received a $1,750 scholarship from the Alabama Farmers Agriculture Foundation and Clarke County Farmers Federation. She was recognized at the Alabama Farmers Federation’s Scholarship Reception at the Ham Wilson Livestock Arena in Auburn Sept. 20. Dixon, who is from Thomasville, is a senior studying animal science, pre-vet track. From left are Federation President Jimmy Parnell, Dixon and Federation Southwest Area Vice President Jake Harper.
