YUPPIE SUPREME CATFISH
1 tablespoon butter
8 Alabama farm-raised catfish fillets
1 (16-ounce) sour cream
8 ounces white wine
2 teaspoons horseradish sauce
12 slices bacon, cooked and crumbled
Lemon slices and parsley to garnish
Grease a 9-inch by 13-inch glass baking dish with butter. Sprinkle both sides of fillets with salt, pepper and onion powder. Arrange in baking dish and bake at 350 degrees for 10 minutes.
Stir together sour cream, wine and horseradish. Pour over baked fillets. Return to oven and bake 15 minutes more. Remove from oven and top with crumbled bacon. Garnish fillets with lemon and parsley when plated if desired.
