3 pounds ripe bananas, sliced
1 box reduced-fat vanilla wafers
1 large box and 1 small box sugar-free instant vanilla pudding mix
5 cups low-fat milk
1 (12-ounce) container reduced-fat or fat-free non-dairy whipped topping
In a large bowl or serving dish, arrange a layer of sliced bananas, followed by a layer of vanilla wafers. Repeat layers two to three times. In a separate bowl, combine both boxes of pudding mix with milk. Beat about 1 minute. Mixture will be thin. Pour over bananas and wafers. Using a fork, work pudding down through layers. Top with whipped topping. Cover and refrigerate. Makes 15-20 servings.
