Cream Cheese Stuffed Mini Peppers
1 pound fresh sweet mini peppers
1 pound mild sausage
1/2 cup onion, minced
1 8-ounce block cream cheese, softened
1/2 cup shredded cheddar or colby jack cheese,
plus more for topping
Cut peppers in half, lengthwise, and remove
ribs and seeds. Place on greased baking sheet. Heat oven to 350 F. Meanwhile, brown sausage with minced onions. Drain.
Combine cream cheese, cheese and sausage; mix well. Place sausage mixture in peppers and bake 20 minutes. Top with more cheese and place in oven for additional 5 minutes, if desired.
