No Bake Peach Tart

Start-to-finish: 1 hour, 20 minutes (20 minutes active)
8 ounces mascarpone cheese
8 ounces cream cheese
3/4 cup powdered sugar
1 teaspoon vanilla extract
Zest of one lemon, finely grated
1/2 cup heavy whipping cream
1 pre-made graham cracker pie shell
6 peaches, pitted, peeled and sliced
1/4 cup peach preserves or orange marmalade
Blend mascarpone, cream cheese and confectioner’s sugar until smooth and creamy. Add lemon zest and vanilla extract. Mix well.
In another bowl, whip the heavy cream until soft peaks appear. Fold into mascarpone mixture. Spread mixture into pie crust. Top with peach slices.
In a small saucepan or microwave, heat peach preserves. Brush peaches with liquefied peach preserves for a nice glaze to dessert.
Refrigerate at least 1 hour or overnight before serving.
