1 egg white
1/2 teaspoon vanilla flavoring
3/4 cup brown sugar
2 cups pecan halves
Beat egg white until it forms soft peaks. Gradually stir in vanilla and brown sugar. Add pecans and stir gently until all are well coated. Spoon mixture on a lightly greased or parchment-lined baking sheet. Bake at 250 F for 30 minutes.
Remove and let cool on the sheet.
