SOMETHING SPECIAL SWEET POTATOES
1 (29-ounce) can sweet potatoes
1/2 cup brown sugar
1/2 cup well-drained crushed pineapple
1/2 cup quartered pitted prunes
1/4 teaspoon salt
1 teaspoon grated orange peel, optional
2 tablespoons butter or margarine
1/4-1/2 cup slivered almonds
Drain sweet potatoes and blot on paper towels. Place sweet potatoes in a greased 1-quart casserole, and set aside. In a small bowl, combine brown sugar, pineapple, prunes, salt and orange peel. Sprinkle fruit mixture over sweet potatoes. Dot with butter; sprinkle with almonds.
Bake at 350 degrees for 40-45 minutes. Makes 6 servings.
