Ingredients

2 cups self-rising flour
1/4 cup plus 1 teaspoon solid vegetable shortening
3/4 cup 2-percent or whole milk

Preparation

Place flour in a mixing bowl. Cut in shortening until mixture resembles coarse crumbs. Add milk and stir until all of flour is moist. (May need to add more milk, 1 tablespoon at a time, until flour is completely moist.) Lightly knead dough on a lightly floured surface until smooth. Shape into a long roll 3-4 inches in diameter. With greased hands, pinch enough dough from end of roll to pat into a biscuit. Place biscuits on a greased baking sheet, sides touching, and press each lightly with knuckles. Bake at 450 degrees for about 10 minutes, or until lightly browned on top. Makes 10-12.
