Ingredients

2 eggs, beaten
1 cup sour cream
1/3 cup canola oil
1 cup cream style corn
1 1/2 cups self-rising cornmeal
1/2 of a red bell pepper, diced
2 1/3 tablespoons diced jalapeños
1 1/4 cup grated sharp cheddar cheese

Preparation

Place a 10-inch cast-iron skillet in oven and preheat to 375 F. Beat eggs with a fork and mix with sour cream. Add canola oil, creamed corn, cornmeal, bell pepper and jalapeños; mix well. Layer half the cornbread mixture, then grated cheese, then remaining cornbread mixture in preheated skillet. Bake for 30 minutes or until toothpick inserted in middle comes out clean.
