BLUEBERRY OATMEAL MUFFINS

Ingredients

2 cups plain flour
1 cup quick-cooking oats
3/4 cup sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/4 cups skim milk
1/3 cup canola oil
2 teaspoons vanilla
2 eggs, slightly beaten (or egg substitute)
1 cup blueberries

Preparation

In a large mixing bowl, combine flour, oats, sugar, baking powder, soda and salt, blending well. Add milk, oil, vanilla and eggs, stirring just until dry ingredients are moistened. Gently fold in blueberries. Pour into 12 muffin tins that have been sprayed with non-stick cooking spray. Sprinkle tops lightly with additional oatmeal. Bake at 350 degrees for 20 minutes, or until tops spring back when press lightly. Makes 12 muffins.
