MANDARIN ORANGE SALAD

Ingredients

1 (3-ounce) orange sugar-free gelatin
1 cup boiling water
1/2 cup cold water
1 (8-ounce) crushed pineapple (in own
juice) undrained
1 (11-ounce) can mandarin oranges,
rinsed and drained
3/4 cup vanilla fat-free yogurt
1/3 cup nonfat dry milk
1 cup lite or sugar-free Cool Whip

Preparation

In a large bowl, combine dry gelatin
and boiling water. Stir in cold
water and pineapple with juice. Add
oranges. Refrigerate for 30 minutes.
In a medium bowl, combine yogurt
and dry milk powder. Blend in Cool
Whip. Gently fold yogurt mixture
into gelatin mixture. Pour into an
8-inch by 8-inch dish. Refrigerate at
4 hours.
