EGGPLANT CASSEROLE

Ingredients

1 eggplant
1 teaspoon sugar
1 egg
1/2 cup mayonnaise
1/2 cup chopped pecans
1/2 cup chopped onion
1/4 cup chopped green pepper
1/2 cup chopped pimento or sweet red pepper
1/2 cup grated cheese
1 teaspoon salt
1/2 cup breadcrumbs
1/2 stick margarine

Preparation

Peel and cube eggplant. Cook in boiling water until tender Drain and mash. Combine sugar, egg, mayonnaise, pecans, onion, peppers, cheese and salt; add to eggplant and mix well. Pour mixture into a greased 8-inch dish. Sprinkle breadcrumbs over top; dot with margarine. Bake, uncovered, at 350 degrees for 35-40 minutes. Makes 4-6 servings. (NOTE: Squash may be substituted for part or all of eggplant.)
