Ingredients

1/2 cup butter or margarine
4 medium Vidalia onions, sliced into 1/4-inch rings
15 saltine crackers, crushed, divided
2 eggs, beaten
1/2-3/4 cup milk
1 cup shredded sharp cheddar cheese

Preparation

Melt butter in large frying pan over medium heat. Add onions and sauté until translucent and tender. Set aside 3 tablespoons of cracker crumbs; sprinkle remaining crumbs in a lightly greased pie plate. Remove onions from pan with slotted spoon; arrange over cracker crumbs. Combine eggs and milk, blending well. Pour over onions. Top with cheese and remaining crumbs. Bake at 350 degrees for 20-30 minutes, until brown and bubbly. Makes 4-6 servings.
