FRESH APPLE CARAMEL CAKE
Ingredients
1 1/2 cups oil
2 cups sugar
3 eggs
3 cups self-rising flour
1 teaspoon soda
1 teaspoon apple pie spice
2 teaspoons vanilla
3 cups chopped Rome, gala or Fuji apples
1 cup chopped nuts
Caramel Icing (recipe follows)
Preparation
In a large mixing bowl, combine the oil and sugar; add eggs, mixing well. Stir in the flour, soda and apple pie spice. Add vanilla, apples and nuts, blending well. Pour into a bundt pan that has been coated with non-stick cooking spray. Bake at 325 degrees for 1 hour and 20 minutes. Let sit for about 5 minutes in pan, then remove from pan and place on cake plate. Drizzle icing over cake.
