SPICY BEAN, TOMATO & CORN SALAD
Ingredients
1 (16-ounce) kidney beans, rinsed and drained
1 (16-ounce) can northern beans, rinsed and drained
1 (16-ounce) can black beans, rinsed and drained
1 (11-ounce) can niblet corn, rinsed and drained
3 scallions, chopped
1-2 tomatoes, chopped
1 each green, yellow and red bell pepper, seeded and diced
1/2-1 teaspoon garlic salt
1 cup viva Italian dressing
Dip-style corn chips
Preparation
Combine beans, corn, scallions, tomatoes, peppers, garlic salt and dressing; toss to blend ingredients. Arrange on a platter. Serve with corn chips. Makes 8-10 servings.
