SPINACH STEAK PINWHEELS

Ingredients

1 1/2 pounds boneless beef sirloin steaks, about 1 inch thick
8 strips bacon, cooked and drained
1 (10-ounce) package frozen chopped spinach, thawed and squeezed between paper towels to remove moisture
1/4 cup grated parmesan cheese
1/2 teaspoon salt
1/8 teaspoon cayenne pepper

Preparation

Make diagonal cuts in steak at 1-inch intervals to within 1/2 inch of bottom. Repeat cuts in opposite direction. Pound meat to 1/2-inch thickness. Arrange cooked bacon on steak. In a bowl, combine spinach with the cheese, salt and pepper. Spoon mixture over bacon. Roll meat up jellyroll fashion and secure with toothpicks. Cut into six slices. Grill, uncovered, over medium heat for 6 minutes on each side, or until meat reaches desired doneness. Remove toothpicks to serve. Makes 6 servings.
