SQUASH CASSEROLE
Ingredients
12 yellow squash, sliced
1 small onion, chopped
2 cups herb-flavored stuffing mix
1 cup milk
2 cups shredded cheese
2 eggs, beaten
1/4 teaspoon salt
1/4 teaspoon pepper
Preparation
Cook squash in a small amount of boiling water until tender; drain and mash. Mix in onion, breadcrumbs, milk, cheese, eggs and salt and pepper. Pour mixture into a greased 9- x 13-inch baking dish. Bake at 375 degrees for 15 minutes. Makes 8-10 servings.
