BACON TOMATO AND SPINACH SALAD

Ingredients

1/2 pound bacon, fried and broken into small pieces
2 tablespoons bacon drippings
1/3 cup Catalina salad dressing
1/2 teaspoon prepared mustard
1/4 teaspoon salt
1/8 teaspoon pepper
8 cups baby spinach, torn
1 pint grape tomatoes
1/2 cup crumbled blue cheese
1 small red onion, thinly sliced

Preparation

In a small saucepan heat drippings, salad dressing, mustard, salt and pepper over low heat until heated through. Toss together all other ingredients. Drizzle warmed dressing over salad and toss lightly.
