WEST INDIES SALAD

Ingredients

1 medium sweet onion, chopped
1 pound fresh lump crab meat
Salt, sprinkle
Pepper, sprinkle
4 ounces of salad oil
3 ounces cider vinegar
4 ounces of ice water

Preparation

Spread half of the onion on bottom of a large bowl. Cover with the crab meat, and then place remaining onion on top. Sprinkle salt and pepper on top of onion, then pour the oil, vinegar and water over all. Cover and let marinate overnight. Toss lightly before serving.
