RED BEAN TOSS

Ingredients

1 (16-ounce) can red beans
3/4 cup thinly sliced celery
1/3 cup chopped sweet pickles
1/4 cup chopped onion
1 cup sharp cheddar cheese, grated
1/4 cup mayonnaise
1/2 teaspoon Worcestershire sauce
1/2 teaspoon chili powder
1/2 teaspoon salt
Fritos corn chips, crushed

Preparation

Drain beans and combine with celery, pickle, onions and cheese. Blend seasonings with mayonnaise. Add to bean mixture and toss lightly. Spoon into an 8 by 8-inch baking dish. Sprinkle with just enough crushed Fritos to cover. Bake at 450 degrees for 10 to 15 minutes.
Note: Jackie says this recipe doubles easily.
