STACKED EGG CUSTARD

Ingredients

(Make 3 Egg Custard Pies as follows)
4 eggs
3 cups milk
1 cup sugar
1 teaspoon vanilla
1/4 teaspoon salt
1/4 teaspoon nutmeg
1 (9- or 10-inch) pie shell, unbaked

Preparation

Beat eggs, milk and sugar together until creamy. Stir in vanilla, salt and nutmeg. Pour into pie shell. Cut out a foil “collar” and place on pie shell rim. Bake at 300 degrees for 30 minutes. Remove foil collar and bake 5-15 minutes longer, until custard is set and toothpick inserted in center comes out clean. Cool completely. Make two more pies. When all pies are completely cooled, carefully remove two pies from pie pans and stack them on top of the third pie still in pan.
