BUFFALO CHICKEN PIZZA with BLUE CHEESE MAYO

Ingredients

1/2 cup mayonnaise
1/4 cup plain yogurt
2 ounces blue cheese
1/2 teaspoon salt
2 teaspoons lemon juice
2 cups diced cooked chicken
1/4 cup bottled hot sauce
3 tablespoons melted butter
1 12-inch pizza crust
Olive oil
3/4 cup pizza sauce
2 cups mozzarella cheese, shredded
1/2 cup diced celery
1/4 cup finely chopped red onion

Preparation

Preheat oven to 450 F. In a medium non-reactive bowl blend together the mayonnaise, yogurt, blue cheese, salt and lemon juice. Refrigerate. In another non-reactive bowl combine chicken, hot sauce and butter. Stir well and set aside. Line a vented pizza pan or large baking sheet with parchment baking paper that has been trimmed so edges do not hang over the pan or touch the oven wall. Place pizza crust on the parchment-lined pan. Mist the crust with olive oil. Spread pizza sauce over the crust. Top with chicken mixture, cheese, celery and red onion. Reduce oven temperature to 425 degrees. Bake pizza for 12 minutes. Remove pizza from the pan and place directly on the oven rack for 3 additional minutes. Cool for 5 minutes. Drizzle with Blue Cheese Mayo. Slice and serve.
