SMOKY MOUNTAINS CHICKEN AND RICE CASSEROLE
2 cups sour cream
1 (10 3/4-ounce) can condensed cream of chicken soup
2 chipotle peppers in adobo sauce, chopped fine
1 teaspoon salt
1 teaspoon ground black pepper
3 cups cooked long-grain rice
2 cups shredded cooked chicken
2 cups shredded smoked Cheddar cheese
In a large mixing bowl, whisk together the sour cream, cream of chicken soup, chipotle peppers, salt and black pepper. Stir in rice, chicken and cheese. Spoon into a greased 9- x 13-inch baking dish. Bake, uncovered, at 400 degrees for 20-25 minutes, until edges of casserole are bubbly.
Makes 6-8 servings.
