Blueberry Pancakes

Ingredients

2 eggs, separated
1 cup flour
1 tablespoon baking powder
1 teaspoon salt
3 tablespoons sugar
½ teaspoon cinnamon
1 ¼ cups milk
3 tablespoons vegetable oil
1 cup blueberries

Preparation

Beat egg whites until stiff. In another bowl, mix dry ingredients, egg yolks and milk. Add oil. Fold in egg whites and blueberries. Pour over hot griddle, flipping each side after 2-3 minutes. Serve warm.
