Ingredients
3- to 5-ounce catfish fillets
Olive oil
Salt and pepper to taste
Juice of fresh lemon
Preparation
Heat grill to medium. Clean grill grate well, and spray with cooking spray. Baste catfish fillets with olive oil. Salt and pepper to taste. Squeeze lemon juice over fillets. Cook indirectly (top rack of gas grill or not directly over charcoal) for 45 minutes. Courtesy of Anne Drury. Start-to-finish: 50 minutes.
