SQUASH FRITTERS

Ingredients

2 cups stewed squash, drained
1 medium onion, chopped
1 large egg, beaten
1/2 cup self-rising flour
1/2 cup self-rising corn meal
Salt and pepper to taste
Oil for frying

Preparation

In a mixing bowl, mash squash with a fork. Add onion and egg and mix well. In a separate bowl combine flour and corn meal and add to squash mixture. Add salt and pepper. Drop by tablespoon into hot oil. Pan fry fritters, turning over in oil, until brown on both sides.
