FRUIT CAKE COOKIES
Ingredients
½ cup margarine, softened
1 cup brown sugar
1/8 teaspoon salt
1 teaspoon vanilla
1 egg
½ cup quick-cook oats
½ cup chopped nuts
½ cup raisins
1 cup chopped candied cherries (1/2 cup each red and green)
1 cup self-rising flour
Preparation
In a mixing bowl, cream together margarine and sugar. Add salt, vanilla and egg and mix well. Stir in oats, nuts, raisins and cherries, then add flour and stir to combine. Drop by teaspoon onto a lightly-greased cookie sheet or cover with parchment paper to save time and clean-up. Bake at 300 F until light brown. Cool slightly on cookie sheet before removing to cooling rack. Makes 5 dozen.
