FRIED GREEN TOMATOES
3 to 4 green tomatoes
1 cup plain flour
1 to 2 slightly beaten eggs
Wash and cut green tomatoes into very thin slices. Dredge with flour, dip in egg, and dredge with flour again. Drop into hot oil and fry until lightly browned. Remove from oil; salt immediately.
Note: Great when dipped into ranch dressing.
