MICROWAVE BAKED BEANS
1/4 pound sliced bacon
1/4 cup chopped onion
2 (15-ounce) cans pork and beans
1/2 cup ketchup
1/4 cup brown sugar
1 teaspoon mustard
In a large microwave-safe bowl,
cook bacon on high for 4 minutes
or until crisp. Remove bacon; set
aside. Add onions to bowl with
bacon drippings and cover bowl
with plastic wrap. Cook 5 minutes.
Carefully add crumbled bacon and
remaining ingredients to bowl and
stir to combine. Cover and cook on
high 5 to 6 minutes or until bubbly.
Microwave uncovered 8 to 10
minutes more, stirring as needed.
Mixture will thicken as it cooks.
Makes 6 servings.
