CHOCOLATE PUDDING
Ingredients
3 eggs
1 cup sugar
1/4 cup cocoa
1/4 cup corn starch
2 1/2 cups whole milk
1 teaspoon vanilla flavoring
1/2 stick butter
Preparation
In a microwave-safe bowl, beat eggs until frothy. Whisk in cocoa, sugar, cornstarch and milk. Microwave on high for 6 minutes, stirring at 2 1/2 -minute intervals. Stir well and continue to cook 3 to 4 minutes more on half power until mixture reaches the proper consistency. Stir in butter and vanilla until smooth. Transfer to a serving bowl and garnish as desired. May be served warm or cold or used as a pie filling in a pre-baked crust.
