1 to 1 1/2 pounds yellow squash, sliced
1/4 cup sliced onion
4 ounces cream cheese, cut into small cubes
1 1/2 cups shredded cheddar or white cheese
1/4 cup cracker crumbs
Salt and pepper
Steam squash and onions together on stovetop or in microwave until tender. Drain and reserve juice. Add cream cheese, half the cheddar, and salt and pepper. If mixture is dry, add some of the reserved juice. Pour into a greased baking dish and top with remaining cheddar and cracker crumbs. Bake at 350 degrees for 30 to 40 minutes or until bubbly.
