Crisped Tea Cakes

Ingredients

Start-to-finish: 1 hour (30 minutes active) 

Makes 2 dozen cookies, depending on size

1 cup butter, softened

2 cups sugar

1 teaspoon vanilla 

2 eggs 

3½ cups all-purpose flour 

1 teaspoon baking soda 

½ teaspoon salt 

Preparation

Preheat oven to 350 F. Cream butter and sugar. Add vanilla and eggs. In a separate bowl, sift together flour, soda and salt. Gradually add to butter mixture. Divide dough in half; wrap and chill. Roll out to ¼ inch thickness. Cut with cookie cutters. Place on a paper-lined baking sheet. Bake for 10-12 minutes. Remove from oven, and let stand 5 minutes.
