Ingredients
2 14-ounce cans black-eyed peas,
drained and rinsed
14-ounce can black beans,
drained and rinsed
14-ounce can fire roasted tomatoes,
drained
1 red onion, finely chopped
1 bunch of green onions, sliced
1 orange bell pepper, chopped
1 red bell pepper, chopped
3 jalapenos, minced
1 cup fresh grape or cherry tomatoes,
halved
3-4 ears fresh grilled corn, cooled and removed from cob
Dressing:
1/4 cup olive oil or vegetable oil
2 tablespoons white balsamic vinegar
3 cloves garlic
2 teaspoons kosher salt
1/2 teaspoon black pepper
Preparation
In a large bowl, mix all vegetables. Combine dressing ingredients and pour over vegetables; gently stir. Best if refrigerated an hour before serving.
