1 (7- to 9-pound) beef loin, rib or eye-of-round roast
Kitchen Bouquet sauce (as needed)*
Salt and pepper
Preheat oven to 500 degrees. Place beef in a large roasting pan. Coat with Kitchen Bouquet, salt and pepper and melted butter. Place in preheated oven, and cook uncovered for 5 minutes per pound. Do not open oven door; turn off oven and leave roast in oven for at least 2 hours. When ready to serve, turn oven to 300 degrees and warm for 25 to 30 minutes. Roast will be rare in the middle, medium to well done at ends, and juicy throughout.
*Note: Dale’s Steak Seasoning sauce may be substituted for Kitchen Bouquet sauce.
