TEXAS CHILI CON CARNE
2 1/2 pounds ground chuck
1/2 pound onion, finely chopped
1 1/4 cloves garlic (optional)
2 cups all-purpose flour
2 tablespoons, plus 1 teaspoon, cumin
3/4 cup chili powder
5 pints, plus 1 cup, beef stock (or water and beef bouillon to equal 5 pints and 1 cup)
1/2 cup paprika
1/8 teaspoon red pepper (optional)
1 tablespoon salt
1/2 teaspoon black pepper
Thoroughly brown ground chuck, onion and garlic in a large pot. Drain well. Add flour and blend well. Add remaining ingredients. Stir and cover. Simmer at least 1 to 2 hours.
Note: After flour is incorporated, mixture may be transferred to a crock pot. Continue cooking as directed, increasing cook time accordingly. Freezes well.
