MOTHER’S CHOCOLATE PIE
1 1/4 cups sugar, plus 3 tablespoons for meringue
1/2 cup self-rising flour, lightly packed
3 heaping tablespoons cocoa
2 cups water
3 eggs, separated
1/4 cup (1/2 stick) butter
1 teaspoon vanilla
1 pre-baked pie shell
Mix all but 3 tablespoons sugar, flour, cocoa, water, egg yolks and butter in a medium boiler. Cook over medium heat until it reaches the desired consistency. Add vanilla. Pour warm filling into prepared pie shell.
Beat reserved egg whites with 3 tablespoons sugar until stiff peaks form. Spread meringue over chocolate filling. Bake at 350 degrees about 5 minutes or until meringue is browned.
