Apple Butter Tenderloin

Ingredients

1 (1 1/2-pound) pork tenderloin
Marinade Ingredients:
1 cup apple cider
2 tablespoons honey
1 tablespoon soy sauce
1/8 teaspoon ground cloves
1/8 teaspoon cinnamon
Remaining Ingredients:
1/8 cup brown sugar
1/4 cup apple butter
1/8 teaspoon ground cloves
1/8 teaspoon cinnamon
1 tablespoon water
1/4 cup chopped pecans

Preparation

Mix marinade ingredients and bring to boil in saucepan. Remove from heat and allow to cool to room temperature. Pour marinade over tenderloin in plastic storage bag. Marinate in refrigerator at least 2 hours, but preferably overnight. Preheat oven to 400 degrees. Mix remaining ingredients together. Remove tenderloin from bag, reserving marinade, and place in shallow baking dish. Pour 1/4 cup of marinade into baking dish. Spread apple butter mixture over tenderloin. Bake uncovered for 20 to 30 minutes. Use a meat thermometer to ensure internal temperature reaches 155 degrees in the oven. Internal temperature will continue to rise to 160 degrees.
