Apple Dapple Cake

Ingredients

3 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
2 teaspoons baking powder
1 1/2 cups vegetable oil
2 cups sugar
3 eggs
2 teaspoons vanilla
1 cup pecans, finely chopped
3 cups raw apples, finely chopped
1/2 cup (1 stick) butter
1 cup brown sugar
1/4 cup milk

Preparation

Preheat oven to 350. In a medium bowl, sift together flour, salt, soda and baking powder. Set aside. In a large mixing bowl, cream together oil and sugar. Add eggs, one at a time, beating until creamy. Slowly add flour mixture, mixing well. Blend in vanilla. Fold in chopped pecans and apples. Pour batter into a greased tube pan. Batter will be very thick. Cook in 350-degree oven for 1 hour or until cake tests done. In last 10 minutes of cooking, prepare caramel topping by combining butter, brown sugar and milk in a small saucepan; cook over low heat for 3-5 minutes, stirring continually. Remove cake from oven, punch holes in top with a toothpick and pour caramel mixture over hot cake. Allow cake to cool 30 minutes before removing from pan.
