Mamo&#39s Butter Pecan Cookies

Ingredients

3 sticks butter or margarine, softened
2 cups sugar
1 egg
2 teaspoons vanilla extract
4-4 1/2 cups self- rising flour, sifted
2 cups pecans, coarsely chopped and lightly floured (optional)

Preparation

In a large bowl, cream together butter and sugar. Add egg and vanilla extract and mix well. Slowly add sifted flour and mix until dough becomes stiff and is no longer sticky. Add pecans, if desired. Separate dough into four sections and roll each section into a 2-inch diameter log. Wrap logs in waxed paper and refrigerate overnight. When ready to cook, preheat oven to 325 degrees. Slice cold cookie dough in 1/4-inch slices and place on a lightly greased cookie sheet. Bake approximately 20 minutes or until lightly browned. Store in an airtight container. Makes 6-7 dozen.
