Swedish Pineapple Cake

Ingredients

2 cups sugar
2 eggs
2 cups plain flour
1 teaspoon baking soda
1 teaspoon vanilla
1 (20-ounce) can of crushed pineapple, undrained
1/2 cup chopped nuts
Icing:
1 stick butter, melted
3/4 cup sugar
1 (8-ounce) package cream cheese, softened
1/2 cup chopped pecans (optional)

Preparation

Preheat oven to 350 degrees. In a large bowl, cream together sugar and eggs. In a separate bowl, sift together flour and baking soda. Slowly add flour to egg mixture, mixing thoroughly. Blend in vanilla; fold in pineapple and nuts. Pour batter into a ungreased 10- x 15-inch pan and bake at 350 degrees for 25-30 minutes. (Caution-do not overbake.) Combine icing ingredients and spread icing over hot cake and serve.
