Ingredients
1 pound bacon, cooked*
1/2 cup mayonnaise
1/3 cup chopped green onions
3 tablespoons grated Parmesan
2 tablespoons snipped fresh parsley
10 to 12 whole plum tomatoes
Preparation
Crumble bacon into tiny pieces. In a bowl, combine bacon, mayonnaise, onions, Parmesan, and parsley. Cut tomatoes in half and spoon bacon mixture into them and serve.
*Note: You can make the bacon mixture ahead and keep in the fridge until you are ready to stuff the tomatoes.
