Rosemary-Crusted Pork Loin

Ingredients

1 (3 to 4-pound) pork loin
2 tablespoons olive oil
Dried rosemary to cover
Cracked black pepper to cover

Preparation

Preheat oven to 350 F. Drizzle the pork loin with olive oil, and sprinkle pork loin with rosemary and pepper, making sure meat is completely covered. Roast until meat thermometer inserted in center of roast registers 140 F. Allow meat to rest for 20 minutes before carving.
