3½ cups flour
½ teaspoon salt
2 teaspoons baking soda
2 teaspoons cinnamon
1 teaspoon ground cloves
1 cup shortening
2 cups sugar
2 cups raisins, chopped
2 cups unsweetened applesauce
2 cups pecans, chopped
Preheat oven to 350 F. Grease a bundt pan.
Sift flour, salt, baking soda, cinnamon and cloves together three times. Set aside.
In a large bowl, beat shortening for 30 seconds. Add sugar and beat until light and fluffy, scraping sides of the bowl occasionally. Add eggs and beat well. Add raisins and beat well.
Add flour mixture alternately with applesauce, beating well after each addition. Add nuts and mix until evenly distributed. Pour into prepared pan and bake at 350 F for 1 hour. Serve plain or frosted.
