Pineapple pecan bars
Ingredients

2 cups all-purpose flour
2 cups brown sugar, packed
1/2 cup butter, softened
1 cup pecans, chopped
1/2 teaspoon ground cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
1 egg
3/4 cup sour cream
1 teaspoon vanilla
8-ounce can crushed pineapple in juice, drained
Preparation
Heat oven to 350 F. With an electric mixer, beat together flour, brown sugar and butter until crumbly. By hand, stir in pecans. Prepare a 9-by-13-inch baking dish with cooking spray. Remove two cups of the crumbly mixture and press into the bottom of the pan. To the remaining crumbly mixture in the bowl, add cinnamon, baking soda and salt. Beat the egg, sour cream and vanilla until well blended. Stir in pineapple mixture and pour over the crumbly mixture. Bake for 30 to 35 minutes until bars pull away from the sides. Cool slightly before cutting into bars.
