Caramelized Pecans

Ingredients

Makes 2 cups

2 cups sugar
1 cup evaporated milk
2 tablespoons corn syrup
2 cups pecan halves
4 tablespoons butter
1 teaspoon vanilla

Preparation

Mix sugar, evaporated milk and corn syrup in a saucepan. Cook over medium heat, stirring constantly. Add pecans and butter. Cook until mixture reaches a soft ball stage (234-240 F), about 10-15 minutes. The mixture will boil. Remove from heat and add vanilla, stirring for 2 more minutes. Drop by spoonful onto aluminum foil.
