BLUE BUFFALO CATFISH WRAP

Ingredients

1 (12-inch) flour tortilla
1 ounce Romaine lettuce, shredded
2 ounces diced tomato
1 1/2 ounces blue cheese dressing
2 ounces “Treasure Sticks” buffalo style catfish bites or strips from Southern Pride Catfish and American Pride Seafoods

Preparation

Lay flour tortilla flat. Arrange half of the lettuce along the center of the tortilla. Fry catfish bites at 360 degrees for 2 1/2 to 3 minutes. Drain and place catfish bites on tortilla. Top with remaining lettuce and diced tomato. Drizzle with blue cheese dressing. Fold tortilla, burrito style, leaving one end open. Serve immediately, with extra blue cheese dressing, if desired.
