VEGETABLE BEEF SOUP

Ingredients

1 pound ground beef
1 (15-ounce) can Spanish rice
1 (15-ounce) can mixed vegetables
2 (10-ounce) cans diced tomatoes with green chilies, mild or hot
1 (16-ounce) can cream-style corn
Salt and pepper to taste
1 (10-ounce) package frozen sliced okra or butterbeans (optional)

Preparation

Brown ground beef in a skillet and drain well. In a lightly greased slow cooker, combine ground beef and all remaining ingredients, stirring to blend. Cover and cook on low 6-8 hours. If soup gets too thick, add a small amount of water. Makes 4-6 servings.
