Pineapple Chicken Salad

Pineapple Chicken Salad

4 cups finely chopped cooked chicken
3/4 cup mayonnaise
2 teaspoons Dijon mustard
1 (20-ounce) can pineapple tidbits in juice, well drained (or 2 cups finely diced fresh pineapple)
1/2 cup coarsely chopped pecans, toasted
2 ribs celery, finely diced (about 2/3 cup)
1/4 red onion, finely diced (about 1/3 cup)
1/2 cup dried cranberries


In a large bowl, add chicken, mayonnaise and Dijon mustard. Stir to combine. Add pineapple, pecans, celery, onion and cranberries. Toss to coat in the dressing. Add salt and pepper to taste. Cover and refrigerate at least an hour to allow flavors to meld. Serve on crackers, in sandwiches, etc.
