Makes: 4 dozen cookies

Ingredients
1 cup brown sugar
1 cup granulated sugar
1 teaspoon baking soda
2 1/2 cups all-purpose flour
1 cup cooked, mashed sweet potatoes
2 eggs
1/2 cup butter, melted
1 teaspoon vanilla
1 cup chopped nuts

Instructions
Heat oven to 350 F. In a large bowl, mix sugars, baking soda and flour. Add remaining ingredients, and mix until just combined. Spoon onto cookie sheet. Bake in batches 10 to 12 minutes.

Stacey’s Recipe Notes
I used a cookie scoop to measure the dough out to 1 heaping tablespoon per cookie. For the nuts, I used pecans.
