Healthy Date Balls
2-3 cups dry quick oats
2 cups granola of choice
1 1/2 cups pecan or peanut pieces
1 cup peanut butter
3/4 cup maple syrup or honey
1/2 cup protein powder
1/2 cup sugar-free chocolate chips
1/2 cup sunflower seeds
2 cups dates, finely chopped
Mix all ingredients in a large bowl. Add more maple syrup or honey if too dry, or more oats if mixture is too sticky. Wet hands with water and form the mixture into golf-ball-sized pieces. Place on a cookie sheet lined with parchment paper. Store in airtight container in the refrigerator or another cool place.
